Piccata Milanese

Ingredients for 4 servings

8Pc small veal schnitzel (80g each)
120G grated parmesan
0.25l Oil (for baking)

  1. Piccata milanese is a classic of Italian cuisine and actually refers to a sliced, small, breaded slice of meat. Veal is usually taken with it. To do this, pound the veal schnitzel thinly and season with salt and pepper.
  2. Whisk the eggs with a fork and mix well with the parmesan.
  3. First turn the schnitzel in the flour and then dip in the egg-parmesan mixture so that both sides of the meat are well covered with the breading.
  4. Bake in hot fat (or in the deep fryer at 170 degrees) for about 2-3 minutes until golden brown. The hot fat should slosh over the schnitzel again and again. Drain the schnitzel on a piece of kitchen roll.
  5. The piccata milanese are served on classic spaghetti with tomato sauce.
